Hot and Sour soup is like a warm hug from the one you love, it just makes everything right with the world.  Yet is one of those rare delights we allow ourselves to indulge in only when we go out to eat.  This soup is actually surprisingly simple to make in your home kitchen and the ingredients won’t break your bank.  This is the recipe I use and make in large batches.

4 cups chicken broth

3 tbsp soy sauce

1/2 cup mushrooms, diced

1/2 tbsp red chili sauce/paste

1/4 tsp ground white pepper

1/4 cup white vinegar

1/3 cup canned bamboo shoots, julienned style

3 oz block tofu, diced into 1/4 inch pieces

2 tbsp cornstarch added to 2 tbsp cold water

1 egg, beaten

2 green onion stalks, diced (including tops)

1/2 tsp toasted sesame oil

Bring chicken broth to simmer in stew pot.  Add soy sauce, mushrooms and red chili paste and simmer for five minutes.  Add white vinegar, white pepper, bamboo and tofu and simmer another five minutes.  Combine the cornstarch with water and stir into mixture until smooth.  Simmer five minutes or until soup thickened.  Beat the egg and pour slowly into the hot soup mix stirring constantly in the same direction for 30 seconds.   Remove from heat and dish into bowls adding green onions and sesame oil to top of soup as garnish.
